If you think that those bananas you bought a week ago and still haven’t eaten are starting to go bad, don’t throw them out! Those black, mushy spots means that they are perfect for banana bread. With just a few more ingredients and a little over an hour’s time, you will have a delicious homemade treat. At home or in the dorm, people will be flocking to the kitchen toward that wonderful smell coming from the oven. With Cooking Light’s healthy banana bread recipe, there are only 187 calories per serving. However, to make that bread extra tasty, we suggest you ditch the calorie count and add a hefty handful of chocolate chips, walnuts or both.
Tip: If you’re not quite ready to make banana bread, put the bananas in the freezer and save them for later — even months later! When you are ready to bake, all you have to do is set them out to defrost or put them in the microwave. Also, if you don’t have vanilla extract, substitute vanilla for plain yogurt.
