The recipe and steps are very simple; all you dorm-dwellers can do it in your lounges with the right pots and pans. This is an easy vegetarian dish that all can enjoy; one of our housemates even thought it smelled like meat. The sesame-peanut-flavored tofu enhances the dish and if you’re going to use plain tofu, we recommend seasoning it before cooking. Watch the oil in the pan before you start stir frying — you can easily burn the garlic or others with hot oil, especially with a temperamental stove. Tofu Shiitake Stir Fry over Broccoli

SERVES 4 ACTIVE TIME: 20 min TOTAL TIME: 20 min

1 lb broccoli florets

1 sweet red pepper (1/2 lb) seeded, thinly sliced

8 oz fresh shiitake mushrooms, stemmed and quartered

2 Tbsp vegetable oil

1 medium garlic clove, peeled, chopped

8 oz White Wave Baked Tofu Sesame Peanut Thai style, cut in 1/4-inch strips

1/3 cup Wegmans Stir-Fry Sauce

2 Tbsp sesame seeds, toasted

1. Blanch broccoli, red pepper and mushrooms 2 to 3 min in large pot of boiling, salted water until crisp-tender. Drain; transfer to bowl of ice water. Drain and set aside.

2. Drizzle oil around sides of stir-fry pan; tilt pan to distribute evenly. Heat oil in pan on HIGH until oil faintly smokes. (If oil smokes too much, pan is too hot.)

3. Add garlic and tofu; stir-fry 1 min. Add pepper and mushrooms; stir-fry 1 min.

4. Add stir-fry sauce; stir-fry 2 min. Serve over broccoli; garnish with sesame seeds.
